dnscrypt-proxy

A flexible DNS proxy, with support for modern encrypted DNS protocols such as DNSCrypt v2, DNS-over-HTTPS, Anonymized DNSCrypt and ODoH (Oblivious DoH).

dnscrypt-proxy can be used to prevent man-in-the-middle attacks and eavesdropping. dnscrypt-proxy is also compatible with DNSSEC.

Easy to setup and great documentation to do just that.

One is able to tweak the configuration file and use the DNS encrypted server or servers they want and apply all the settings desired.
